What has clueless made for tea

    Evening all. I made something for dinner that was inspired by something I once had in a Mexican restaurant, but I can't remember what it's called.

    I put spicy roast chicken in a tortilla wrap, along with fried onions, peppers, mushrooms and tomatoes. While all that was frying I added garlic and some tomato puree, and a dash of balsamic vinegar. This fried saucy mix went in the wraps along with the roast chicken pieces.

    I wrapped the wraps into parcels, then held them shut with cocktail sticks. Then I covered them in cheese, and whacked them in a preheated oven for a few minutes, just enough to melt the cheese and crisp the tortillas.

    So what have I made us? I don't think it's a fajita because I think that's just a wrap, with no visit to the oven.

    Wikipedia says an enchilada is coated in chilli sauce, and it makes no reference to going in the oven to crisp up.

      I thought fajitas were not toasted in the oven?

        When they serve them here, they bring an extremely hot fajita iron to the table for people to make their own wraps. The iron toasts the wrap as well.

          But isn't it all down to personal preferences and ways of doing things?

          For example, take crumpets..... A lot of people toast them but I once had them in a hotel in Devon and they were beautiful and soft with butter all the way through them. I found out later that they had completely smothered them in butter and microwaved them for a minute :)

              I've googled many things. I conclude that what I made is probably a, wait for it, fajitaburritoquesadillachimichanga.

                  Enchilladas are coated in a chilli sauce, topped with cheese and then put in the oven to finish off.
                  Think a Mexican version of lasagne ;)
