    Red, brown, green, Puy and yellow lentils depending on what hubby fancies @shiney, also split peas and chickpeas make good curry. Last night was red with some mushrooms and spinach added with some long grain rice. Oh yes :snork: it was good :snork:

              Sounds yummy:) Do you use a particular recipe? I use lentils in other things I make but have not tried it in curry.

                @luciusmaximus, this makes enough for three people or one of me and my hubby :)

                1 onion finely diced
                2 cloves garlic
                1 1/2 teaspoon of cumin, coriander, chilli, tumeric, curry powder, ginger, garam masala
                1/2 teaspoon white sugar
                Splash of vinegar
                2 dessert spoons tomato puree
                I cup of lentils or other pulse or bean or pea
                1 teaspoon Oil

                Fry onions on medium heat for around 20 minutes until browned

                Soak and rinse lentils. Cover with water, bring to the boil then simmer for around 10 minutes then drain

                Once onions are brown stir in all spices except garam masala for a few minutes, the mix should be fairly dry looking at this point.

                Add tomato puree, sugar and splash of vinegar

                Add lentils

                Add water if needed to meet the consistency you want. Keep it thicker for lentil curry, thinner if using as base for chicken or mushroom curry etc

                Heat through for a few minutes, stir in garam masala just before you serve

                          Woke up to dawn chorus as usual at 5.00am, realised it was a lovely morning too. Went to beach later, picked up some driftwood and sat for awhile listening to waves and watching birds. Pottered about in garden. Saw aerial battle above my house between 2 Buzzards and 2 Crows. Crows won. I think the Crows are nesting in the fir tree in front garden. Been beautiful all day and wonderful sunset earlier, amazing colours and patterns.
