Bread making machines

    1. I'm enjoying a mix with rye flour at the moment, 200g each of strong white, rye, and whole meal in my panny. I get my bacheldre organic flour from Amazon, always get good results. I like the sound of the Aldi'sspeciality flours, I'll give them a go.

    I have tried some of their mixes. I find they say to put too much water in. Beware. I now use less and it works better.

      My comment was about the speciality flours, rather than their bread mixes (ie yeast, sugar and salt included). I tend to use the same basic recipe for all my breads (happens to be the one on the side of the strong white flour from Colruyt), be they white, gris (a mix of flours) or brown, but just allow more time for proving for the brown. I use the machine to make the dough, then bake in the oven. Works for me!

        Same here, never quite seems right baking it in the machine though there are some good looking loaves on show on this thread. Mine never looked like that, generally pale and interesting was as good as it got and the taste was kind of .... poached. I bake regularly so let the machine do the hard work and oven bake.

        Sian, not a specialty mix bread (I've not tried those, generally chuck a mix of linseed/sesame/poppy or a mix of fruit and spices in myself), but though I'm not a flour snob, I do like Carrs flours, both the white and wholemeal make very tasty loaves.

        I'm going to have a look at some of the mixes suggested and have a go.

          There are some very good reasons why I use the machine to bake loaves ;)
          1. In this house, the oven only has two temperatures: on and off - so I couldn't reliably bake with it. Actually, one of the hinges on the door has rusted off too, so no longer air tight either :roflol:
          2. When I first bought one, the house I lived in had a very small kitchen and putting the oven on would very quickly heat up the kitchen: great in the winter; not so great on a hot summer day :heehee:
          3. The Timer Facility! This, particularly if I am making a loaf to take to my sons when visiting at their Uni's, is a God send. Especially as when we go it is as day trips and it is a long, long, long day trip when it is from here to Swansea or Lincoln :heehee:
          4. Fuel Economy: I cannot justify heating up an oven (when I had a reliable, working one that is :heehee:) just for a loaf; it goes against everything I was taught. If the oven goes on, it has to hold more than one item. That will probably change when I have a decent oven and then I'll go back to more traditional baking patterns and it will make more sense for me to oven bake a loaf alongside other goodies.
          Interesting comment about the "poached" taste. I haven't experienced that, but, I wonder ... did you remove the bread as soon as it was cooked, or did you leave it in there until it had cooled?

            @"M" for poached maybe steamed taste/texture describes it better. Also no crust all around, well not for me, no proper crust even on the top. Perhaps I have a rubbish bread machine technique. Anyway, I like doing it in the oven. I also make two loaves out of a normal 500g flour batch.

            Your stove does sound rather a character ... :heehee:

            p.s. bought a 500g bag flour mix thing from Sainsburys I'm going to give a go, nothing too adventurous to start, think it is 'mixed seed' or similar.

              I've found since I switched to better flours I get a nicer crust, also it comes out of the bread maker as soon as it's done otherwise the crust goes soft...

                I used to have a Morphy Richards machine, which produced some nice loafs, but mostly disappointed. Since having the Panasonic, I don't think I've had a single failure. I'll have a slice (or two) with a salad shortly :)

                      I wouldn't be using a breakmaker if my electric source was solar - the watts one of those would use would drain the batteries in a big hurry.

                      However, next time @Zigs you have a bonfire - why not try using some of it's heat to bake something. You're so inventive, I'm sure you could build a chamber to sit at the base/fringe of the inferno?
