Cooked Cocktail Sausages

    With being somewhat out of commission, quite a few of the snacky bits that we had in for New Year never got touched, one of which is those wee cocktail sausages; there is a couple of days left before their use by date, and I was wondering if there was anything I could do with them to make something a bit more interesting?

      Make mini Toad in the Hole? Put them in a bun tin (one per "cup"), add your batter: Bingo!

      OR

      Make them into a sausage casserole? Brown off some onions (garlic if you like it) in a pan, add your sausages; add a tin of baked beans, or tinned chopped tomatoes (or both!); add herbs of your choice and thicken (if required) with your choice of thickener (e.g. Bisto, cornflour, flour)

      OR

      Use them in a pasta sauce: fry finely chopped onions (garlic if you like it), add Italian herbs (or mixed herbs), chop the sausages into bite sized pieces, add a tin of chopped tomatoes. You can thicken that sauce with a spoon of cornflour mixed with either a few drops of Worchester Sauce, or water. Pour over cooked spaghetti.

      OR

      Make sausage pizza: French stick cut into slices (or, pitta breads). Toast one side, turn over, spread with some tomato puree, add sliced sausages, top with grated cheese, toast! If needed as a quick "meal" then serve with salad and pickles.

      OR

      Use them sliced or diced in an omelette

      OR

      Use them in a sausage and cheese toastie/pannini

      OR

      Put in a casserole dish with a tin of baked beans or chopped tomatoes, add any seasoning you fancy, top with mashed potatoes and bake in the oven.

      OR

      Roll in pastry and make sausage rolls

      OR

      Core out the centre of baking potatoes, lengthways, with an apple corer, stuff the cavity with the sausages and then bake the potatoes as normal

        Oooh, some great ideas! I like the baked beans and top off with mash idea particularly. :)
