Parsnip problem!

But a good one.

Before the cold weather, it took me an age to dig a parsnip out, if it freezes over again I worry about my Christmas meal, should I start the digging now? On average, my "snips" have been about 2' long, 10" circumference at the widest point. Taste great too!

 

Now hang on your Parsnips are way bigger than mine @Vince Mine are about 1/2 that size. If I were you, yes I'd dig some up while the ground isn't a la concrete which it is here. I think the forecast is for things to warm up especially where you are but it can sometimes take ground ages to defrost even if the air temperature is well above freezing.Parsnips last for ages out of the ground as long as you don't store them somewhere warm. Shouldn't be difficult to find a cold place with the kind or weather we have been having! I would expect most/all of the top growth has been frosted off but if not I'd take off any top growth when you lift them and don't wash them until you are going to use them. By having left them to get well frosted they will taste better for it. I'm cooking some of mine round the roast lamb on Sunday, yum.

 

The forecast is for "warmer" weather until midweek or so, possibly longer. I'll leave them to midweek, dig the last remaining out, store those I need for the festive period a la Silu and blanch and freeze any hangers on.

 

I've not come across frozen ground, like concrete, for about 20 yrs or more, what's going on??

 

Can't say for the rest of the UK @pete but as far as I'm concerned regarding"what's going on??" it's called winter in Scotland.
