What did you have for dinner?

No idea if this is going to be nice or not, but I have put the following together this morning (with supervision/assistance of course):

Small brisket joint
3 small onions, peeled and quartered
4 garlic cloves, crushed
2 carrots, chunked
sprig of fresh thyme
sprig of fresh rosemary
1 can of el cheapo (Sainsburys Basics!) Bitter
4 bay leaves
5 Oxo cubes

Drizzle of olive oil into casserole dish, on the heat for minute, then put the brisket in to brown a little on the bottom; onions, carrots and garlic lobbed in to cook for a minute or two, then chuck in the herbs and bay leaves before adding the beer; that was then allowed to heat until bubbling and then the Oxo cubes were added, followed by enough water to just about cover the brisket (there is a tiny wee bit at the top poking out), brought back up to heat gently then covered and popped into an oven at 150ºC where it will reside for about 5 hours.

When done, the fluid will be reserved by passing through a sieve and squishing the carrots and onions through too, and then that will be the basis for a gravy.

We are going to serve with parsnip chips, yorkshire puddings and cabbage. Smells OK for now, but time will tell.

Last night I had home made salt beef, loads of home made mustard with it , and chips and peas. Yummy. There's enough left over for salt beef sandwiches using rye bread

 

I will catch up with this over the weekend, but in summary:

Tuesday - Chicken pot pie and green beans (really, really nice!)

Wednesday - Salad & cold meats, including potato surprise

Today - Coated chicken, chips and Southern style gravy

 

Yesterday I had Cajun chicken with mustard mash and runner beans. Followed by blackberry, rhubarb and apple crumble - all picked yesterday.

Things are going to be a bit more complicated for the next four days. We have different people coming for dinner each day so, in theory, I could do the same thing each day . Instead, currently in the planning stage , I may do different ethnic meals each day. Indian, Chinese, Italian and N. African.

 

It's not foreign muck! It's all made down here in Shineyland. They may have names of foreign countries but that's just to distinguish the style of cooking .

Putting my foodie hat on:-
You may think that fish and chips is typically English but it isn't . Fried fish is thought to have originated in Portugal and then was taken to eastern Europe by the Jewish people that escaped the 'Spanish' Inquisition (Spain and Portugal) in the late 1400's.

It was brought to England in the 1800's (when they were escaping the Pogroms in eastern Europe) and the first know commercial combination of fish and chips (fried chipped potatoes are thought to have originated in Ireland) was in the 1860's when Joseph Malin opened a 'chippy' in the East End of London. I used to work near them but not in the 1860's

"In 1968 the National Federation of Fish Fryers even presented a commemorative plaque to Malin's of Bow, recognising their founding role in the chippie business."

I don't cook fish and chips as it's too fattening (but really like it)
