    Haven't decided yet whether to make Keto courgette bread or Keto courgette bites but shall use up the last of the courgettes. Keto is a low carb diet especially good for people with type 2 diabetes (also used for epilepsy in children) and this bread is quite tasty - made with ground almonds instead of flour. You can add other things you may like such as ground coconut, cinnamon, sweetener etc.

        Cream of mushroom and courgette soup, followed by ribeye steak with roasted slices of potato and cauli brushed in butter and roasted thinly sliced fennel topped with olive oil, a touch of balsamic and a pinch of sumac. Fresh mango for dessert.

                      I enjoy eating and cooking. Luckily they go together quite well. :heehee:

                          Dinner,Sardines with spicy vegetable rice+ a mixed salad.

                          Tonight , egg sandwich = 2 slices of brown seeded bread ,no butter or 'spread', 1 egg, poached in microwave, ground black pepper, and an apple. Hubs will probably add low fat Mayonnaise to his, but I can't stand the stuff. :)

                                Chicken-for-a-week i.e. 3 large breast portions browned and simmered in a spicy broth. They will cool in the broth and get used in various ways next week, surplus sliced and frozen.

                                Tonight it took part in a Mexican meal, guacamole (it's so hard to bin the stones, they all had small rootlets already bursting... but four plants is enough already :whistle:), beans and sweetcorn, soured cream and nachos.... mmmm....
