Chilies 2022

    I moved that chilli into the converted shed and its putting out fresh healthy shoots.

    Also i have the same hydrator as you guys, heres me using it today for a few chillis and some foraged porcini. Will make duxelles out of the chanterelles and freeze that.

      My Shineybrids are starting to turn from yellow to orange and so it won't be long before I'll have the final stage of red ones to start picking :dbgrtmb:

      Okay, this is my weird news about my chillies. Remember when I chopped down everything but the Shineybrids because of a persistent white fly invasion. Hosing continually, spraying etc did not keep the little so and so's from the plants so I chopped them all down to within a few inches of the soil. I put those pots at the side of the deck. Covered them with plastic to let the dirt totally dry out so I could then back the dirt to death. Pulled the plastic off today and lo and behold, the stumps are sprouting in 5 of the pots!

      So, now what do I do. There are no bugs on them that I can see and I am treating the soil with mosquito bits just to make sure the soil is not harbouring anything. There is not enough time to have them fruit up before the snow flies. So I'm thinking I may have to overwinter them under lights.

      And if I do that and then get fruit. It will be a mystery because I pulled out all the labels when I chopped them down so I have no idea which is what !

        As chillies are perennials, given the right conditions, you may be quite lucky. :)

          Thank you @shiney . Looks like only three will be viable after all but they, for sure, are coming in for the winter.

          My Shineybrids are doing fantastic! I've started harvesting a little each day. What soldiers they are considering the battle with whitefly!

                Mine are mostly healthy and in full swing, just spotted one or two signs of botrytis (not photographed):

                I've got a single tabasco plant that is very late, I bought it on impulse in mid June. It's going to have a lot of chillies if the weather holds out:

                  This one is waiting to be picked up this afternoon. It is one of the last four ShineyHybrids left for sale. Someone bought five a couple of weeks ago. Unless they are selling them on for profit I can't see why they wanted that many! Under cover they should continue to flower and fruit until at least Christmas.

                    Hello all,

                    Just been harvesting the remaining sweet peppers. I took them off the plants though they are mainly green.

                    Also picked a few ripe Birds Eye chilis and a few orange Habaneros. Still lots of Habaneros, JalapeƱos, Hungarian Hot Wax and Birds Eyes to ripen but I know we are running out of time.

                    We cut down the greenhouse tomato plants removing any tomatoes left on them though we still have plenty of ripe tomatoes outdoors that need picking in the next few days for soup making.

                    Another month and we will be finished. We can then start all over again!

                        Indoor plants looking healthy for me still. Only a few plants left at the allotment, all locotos. I moved one into the greenhouse, the others are in the ground. I stripped the other varieties of their unripe chillis and composted the plants themselves. Some of them here with some apples, sugarloaf chicory and green azoychka toms.

                          Made a mash with 950g mixed chillis, 50g toms to bring it up to 1kg and 25g of salt. Used the food processor, then vac sealed it in an extra large bag to allow for CO2 while it ferments. Plan is to make hot sauce in about a month then make pepper flakes in the dehydrator IMG_20221003_180007506.jpg

                            Good selection there. Should make a nice hot sauce. Just a bit confused about your numbers. In your case, I would use 1litre of water with 2.5% salt by weight up to 4% for longer fermentation optionally. Are you treating your chillies/tomatoes as part of your fluids or did you just accidentally miss out the water? Maybe just a different technique.

                            What are the pear shaped chillies/tomatoes? They remind me of Ramala tomatoes but there are chillies this shape too.

                              The small pointy ones? They are biquinhos.

                              Other chillis are aji limon, jalapeno, orange pepperoncini, locotos. Many unripe but yeah should still be good.

                              I'm going to ferment them without water, so its just 2.5% of the weight of the chillies as salt. Then once fermented I'll put them through my juicer, then will make the hot sauce from whatever liquid comes out. I may add some other liquid to it to get a reasonable amount of sauce, not decided yet though.
