Tomato Growing Thread 2023

What do you all do with the excess fruit? In the past I've cooked them with onion and garlic and frozen them, but freezer pretty full at present. US canning instructions say to add bottled lemon juice (not fresh) to the kilner jars and then boil/steam, but I think I'll have to order that online.
Pic shows latest haul - varieties gardeners delight 2015, sungold, Cerise, peche and the monster Carbon - largest weight is about 520gm!

 

3rd lot of tomatoes in the dehydrator, 3 lots of tomato and basil sauce (homegrown onions, garlic and basil) one focaccia proofing filled with oven dehydrated sungold, just waiting for another load of tomatoes to go on top before cooking. One big bag of whole tomatoes in the freezer and a bagful for my SIL. Still got stacks more to process and plenty left to pick! Hopefully the promised return of summer will hurry them along.

Any remarks on my messy kitchen will be ignored!!! It’s always like this!!!!

 

Honestly, dehydrator is a very handy tool. You can dry loads and store them for months so long as they are properly dried. Added to stews, bolognaise, lasagne, curry etc really elevates the dish. Also good to hydrate them, spread on toast, bung a load of cheese on top and toast…YUM!!!

 

Do you then have to seal them in vacuum bags or can you just put them in ordinary jars?

BTW, Kitchen looks really tidy.

Wow @Susieshoe you're very organised! A dehydrator is tempting but yet another device to find room for. I think I'll have to continue freezing the tom, onion base instead.

 

It's getting cooler on a night here. I've picked a lot of the bigger toms and brought them inside to finish ripening. Dwarf Mary's Cherry, Dwarf Wild Fred and Der Kleine Doctor.

Sorry, didn’t see the first part…was blinded by your opinion I had a tidy kitchen! I just put my dried tomatoes in ziplock bags. Once you get a taste for dried tomatoes theY don’t last long!

 

Not all toms but a mixture of those a sweet peppers.
I've given a lot away but still more than I can eat.

 

It's the last large picking for me today. 3.5 kg.
Think I make some tomatoe juice-puree. Not able to eat everything fresh.

 

You may remember that Blight hit my outdoor tomatoes. I lost all my cordon tomatoes, pulled up and sent to non biological dumping. I even had blight in resistant species Crimson Crush, which was also pulled up. We had ONE OF EACH SPECIES grown in the greenhouse which of course we were watching VERY CAREFULLY! Amazingly the blight has yet to affect them!! Infact they are fruiting very well!! Cherry Tom's, Crimson Crush and Ddraig Goch.
