Beetroot & Apple Wine... ;)

    What about a drop of this too Zigs..?? :D

    You will need......

    4 lb / 1,800 grams beetroot
    1 lb / 450 grams apples
    3 lb / 1,350 grams sugar
    1/2 oz / 14 grams citric acid
    1/2 pint strong black tea
    Water up to 1 gallon
    Yeast nutrient
    Wine yeast

    Winemaking Method:
    Clean and slice the beetroot & apples and boil until tender. Put the sugar into a fermentation bucket and pour on the strained beetroot liquid. Stir well until all the sugar has dissolved. When cool add the strong tea, citric acid, yeast nutrient and wine yeast. Cover and leave to ferment for eight days, stirring daily. Using a fine sieve strain the liquid into a demijohn and fit an airlock to seal the jar.

    Store in a warm place and allow the fermentation to work. When fermentation has ceased, rack the wine into a clean jar and place in a cooler environment and leave for a further few months. When the wine is clear and stable siphon into bottles... :dbgrtmb:

      Thanks for the recipe Marley, beetroot and apples coming out my ears at the moment :rolleyespink:, I'm going to have a go.

      Well that looks a goer as you only need the strained water from the beet & apples. So the pulp could go on to become a sauce or something.:dbgrtmb:

      Certainly could Zig I have a basic one I have adjusted to what I think the quantities will be you could follow if you want....

      Assuming you used 5lb of beets & apples I would cook down 2lb of onions till really soft in minimal amount of water like the beetroot apple mix..You can either rub the pulp & cooked onions through a very fine sieve or if you can, purée in a processor..
      Put in a the pan with 3 litres of vinegar..
      2kilo of dark brown sugar
      about 100gr salt
      8 cloves of garlic finely chopped
      4tsp ground ginger
      4tsp ground nutmeg
      4tsp ground allspice
      4tsp ground cayenne

      Bring to the boil stirring all the time.. Then simmer uncovered until the sauce has thickened I would think about 1-2 hrs to be honest..

        After running around looking for jars last year i've put in a dedicated empty jar cuboard this year.
