Home smoking garlic bulbs?

    Has anybody done this? I would like to use this method to store some of our harvest this year and would appreciate any tips/advice on how to do so :-)

    I've hot smoked it when i'm doing fish, but I don't think that would make it keep very long. Probably best off cold smoking it for storage.

      After smoking it you need to dehydrate & pulverise it to a powder. I haven't done this myself but I've got some my kitchen produced by somebody else a cou[ple of years ago.

      if you have a weber kettle bbq with a thermometer, you could try smoking the fresh garlic

      make a fire on one side, but use wood and not charcoal ...

      buy some smoke wood chips (places such as John lewis used to have them in all different types such as oak, hickory etc)

      place a handful in a bowl and cover with water for an hour or 2

      wait till the temp in the BBQ drops to 70 - 80 degrees C then get an aluminium foil pie dish (or make one from tin foil) ... place the soaked wood smoking chips in the dish and place directly on the burning/smoldering coals ....

      place the garlic in the BBQ on the side that does not have the burning coals

      close all the vents on the BBQ and leave till the coals have burned out

      may work? ....

      I've never tried garlic, but have smoked fish and meat (especially pork rib) in the same way

      Fresh garlic is freshly dug garlic AKA 'green garlic' and this has at about 25% more moisture content than those bulbs which have been dug up and cured by hanging up to dry for storage.

      So I would have thought that attempting to smoke 'fresh' garlic may result in steamed cloves.
