Carribean trifle ( by kind generosity of Jack the Mac)

You will need a dish 10" x 8",a McVities Jamaican Gingercake,a generous sloshing of Rum, a large can of evaporated milk,a can of Alfonso mangoes(strain off juice),2 packets of instant custard powdermix(Asda 8p each!)a 300ml tub of whipping double cream, an Easiyo Fruit squirt (passionfruit flavour) and a Cadbury Milk Flake.
Method
Slice the cake and cover the base of the dish. Pour over the Rum - enough to soak well but no surplus liquid !! Place the strained mango slices on top.
Make up 700ml of combined water and evaporated milk, add to a saucepan,mix in the 2 packets of custard powder,bring to boil -- whisk all the time to keep it from burning the bottom of the saucepan and make it creamy and smooth. Cool for 5 minutes and then spread it over the cake. ( I covered mine with cling film until cold to stop a skin forming). Remove when ready to do next stage.
When cold, whip the cream and cover the custard. Drizzle with the Passionfruit topping and the crumbled Milk Flake over the trifle.
Will serve about 8 portions.It is very rich....
