Lemon Drizzle Cake

    Lemon Drizzle Cake.

    6oz soft marge
    6oz caster sugar
    6oz S.R. Flour
    2 Eggs
    1 Lemon
    4oz Granulated sugar.

    Beat marge, caster sugar and S.R.flour together.
    Add lightly beaten eggs and grated lemon rind.
    Put into a lined loaf tin that is large enough to have space for mixture to rise.
    Bake in a moderate oven (160 deg) until risen, 25-30 minutes
    Mix lemon juice with the granulated sugar and pour onto the top of the cake as soon as you take it out of the oven.
    Allow to cool in the tin.

    Delicious!!

      ooh! Hubby's got to work all Saturday, and I was thinking of doing a "treat" for him to take into the office with him. This fits the bill perfectly. Thank you!

      I'm thinking of baking today to warm up the house a bit LOL! This sounds perfect. Plus I've been craving a lemony treat lately.......

          Just waiting for it to cool a bit so I can try it. I only used 4 oz of sugar for the topping bit. IMAG0504.jpg

            This is DEFINITELY going on my make again list. Next time I will heat the sugar lemon mixture to dissolve the sugar. I might cut back the sugar a bit more as well. Other than that it is lovely!! Light and fluffy and the lemon flavor is excellent!! Thank you Jan for the recipe!

                Heee Heee that's something. Actually it goes together really quickly. Not loads a faffing to get to the end and EATING! LOL!!.

                        hmmm - didn't take a photo of mine, prob because I'm too embarrassed to show them! They did look like that, and then we had a cave-in! After adding the sugar-juice, the centre "crease" collapsed in. I'm still getting used to the new oven, and it's hard to find the equivalent of a "normal" baking setting. I'll try again....
