    Was it hung properly? :dunno: Many years ago, someone I was "related" to (aka X) had an uncle who was a very traditional butcher; his advice was that pheasant should be hung until the maggots arrived and only then was it ripe for the table. I did have the dubious honour of tasting thus ripened pheasant (and very nice it was too!). I then experience pheasant a number of years later at a works Christmas lunch and it wasn't a candle on "Uncles" (blur :eeew: ).

    Mind you, Elf and Safe T probably have something to say on the matter.

      I'm not convinced that it was hung at all to be honest - I got it from my butcher, who does only free range stuff and to be fair the stuff I get is usually top notch. This pheasant seemed a tad on the fatty side, whilst the breast meat was stringy.

      I've followed it up with some crackers and cheese, so feel a bit better now - and the Grouse is flowing down a treat; not sure the mince pies in the kitchen will be safe for much longer though..... :biggrin:

      I had pheasant once. Can't see the appeal myself. Like chicken, minus the flavour, and so skinny it hardly seemed worth the bother.

      Based on the one I have just had, I'd agree clueless. I last had it years ago when I worked at a country estate (proper landed gentry) - the old eccentric mother brought us cold meats for our sandwiches one day (she was as daft as a brush, but such a lovely woman), and one of the meats was pheasant - and it was really lovely.

      However, I think it was cock pheasant that had been well hung - I am pretty sure that today's effort was a hen pheasant that hadn't been hung, and today's one simply wasn't nice.

      Only meat i've eaten (apart from an accident with a goat in Turkey) since 1984 was a road kill pheasant. I was hungry & skint.

      It tasted fine, but didn't seem right after all that time.

      Ah, see whist I respect anyone who chooses to be vegetarian, I am an omnivore through and through, and I do love a good bit of meat

              Bit late but Happy New Year everyone.

              Had only time this morning to read the last page here.

              BTW, pheasant is best hung in your shed until the head falls off :ouch1: and then it's ready for plucking, removal of the insides and cooking. Sounds horrible but it tastes fabulous that way and tastes nowhere near like chicken but is really brown and gamey.
