How does this sound for a bit of a mash up?

    I used up a roast chicken breast and made a curry over rice.

    It was the corned beef hash tonight - been a busy couple of days one way and another, so quick easy dinners have been the order of the day. Did smoked sausage with saucy tatties last night, which was lovely too.

    Sainsbury's Shuffle tomorrow, so goodness knows what the next week holds.

    We had bbq'd chicken with chilli, garlic and paprika, with rice and salad. Got a lemon cheesecake to have later with a glass of something.

        Hate to preach to the converted FC, but, you may find that planning your menu in advance will save you money - plus, keeps you on track budget wise.

        If that is too daunting, then at least keep a written record in your diary of what you had for dinner that day. Think about, do that for a couple of months and you'll have 8 weeks worth of menu plans already written out ;)

        Another option (if you are a buy it on spec kind of shopper), keep the receipt and when you have a spare 20 minutes, go through it and list how many items will make a meal (including from leftovers) and then write your week/months menu from that.

        Sounds really rigid, but it never is. For example:

        ~ 1 tin of corned beef, 3 different ways (sliced with salad, new potatoes; corned beef hash, corned beef hotpot.

        ~ 1 packet of sausage meat, 3 different ways: made into a meat loaf; used to make Scotch eggs; used to make "burgers" (add grated onion and grated apple, a few stale breadcrumbs, an egg to bind the lot together, maybe some sage? Voila!)

        I've never been so rigid to have a predictive: "This on that night, that on a Monday/Tuesday/etc night" but I do have a few basic recipes which make a variety of meals so I can vary what, when, how many and occasion (not to mention making the most of the deals around too).

        I tend to plan the meals up to four weeks ahead, and mostly around the meat that I have in the freezer (I buy that in bulk, blast frozen, from a really good quality butcher); however, as we are on 'holiday' this week and next, I am being a little less rigid than I normally would be.

        EDIT - any chance of the corned beef hotpot recipe please :wub2:
