Glut of beetroot.

    I have a lot of beetroot left and was thinking about pickling it and giving some away at Christmas, however I have never picked anything before. Do I need to cook it first or will the pickling process sort it out? Also what vinegar do I use for pickling?

    You need a vinegar above 5% It says on the bottle. You can buy ready spiced pickling vinegar but its easy enough to spice your own according to taste.

    Don't cook it first.

    Try to find dark jars or once its done keep the jars out of the light to keep the colour otherwise you'll be giving away brown beetroot by Christmas :)

    Add a bit of garlic when you pickle - it turns beetroot pickle into something else entirely!

    I love beetroot....would it grow in a big container?

    I would think that it would grow perfectly well in containers, although I have never grown it this way.

      Im told it makes quite a nice wine, although Ive never managed to grow enough to try making any.

        I pickled some jalapeƱos at the weekend and I used 3/4 of a cup of water 3/4 cup of distilled vinegar 2 crushed garlic cloves a spoonful of sugar a spoonful of pickleing salt brought it all to the boil with the chillies in and took off the heat left it to cool for 10 mins and stuck it all in a jar in the fridge.

        Have you thought about juicing some of it Rusty? Beetroot, carrot and apple - one of the best energy giving juices you can make. You need to drink it as soon as possible after juicing, before it starts to oxidise.

        Yes, (with some stem on) to get the skins off and avoiding bleeding beetroot juice everywhere. (got that past the filter!)


        P.S. Mrs Scrungee says Google beetroot & chocolate cake - she's been told it's really good.
