    Next injection due a week on Friday - can't wait. Not that I enjoy having the injection but it does help.

      We're on a Mediterranean theme lately. Today was roasted stuffed tomatoes with garlic bread.

      The roasted stuff toms were filled with rice, olives, rosemary, garlic, onion, and a little bit of mince (possibly beef, possibly horse, possibly stray dog, who knows these days).

        Saturday night was a roasted chicken with roasted acron squash riscotto with fresh sage leaves, garlic and sour cream, butter OO. Sunday will be a pork loin roast which was marinated in lime juice, soya sauce, minced garlic, OO, salt, red pepper, and red potatoes and roasted carrots with cumin.

          Speedy get well wishes winging their way to you, GA :grphg: <--- that's not a bear hug, that is a gentle squeeze so it doesn't aggravate your shoulder ;)

          Put them on a trivet to roast them (if you don't have one, improvise with balls of silver foil) that will let the drippings ... drip.

          Use those drippings to make tasty roast potatoes.

          Let the meat cool for slightly longer than usual so you can trim off any fatty bits within the meat.

          Shoulder of lamb/pork is particularly fatty - so, maybe save up and only buy a leg joint and have it less often but get a better result? And we're coming up the season where you can get leg joints of pork and lamb at a really good price in the supermarkets. Christmas time is when I buy up a number of joints at their bargain price and then freeze them raw to carry us through the rest of the year. Larger joints can be cut down into smaller pieces. Left over roast meat sometimes gets frozen (along with left over spuds and yorkies) and then, if I need a speedy roast meal it's just a matter of defrosting the cooked meat and 'reheating' the frozen roast spuds/yorkies (they don't take long) with some fresh veg. Didn't happen often when the boys were home though :heehee:

          That's called my: "Where there's a will there's a way" philosophy with joints :redface: :heehee:

            Sainsburys are, currently, selling boned leg of lamb for £10 a kg and shoulder (bone in) for 35 kg. That's at their butchers counter and not in the display cabinets.

            Yesterday I had a very good Indian :blue thumb:. Popadums (not greasy), chicken tikka (moist and tasty) and Naga lamb (mouthbustingly hot, extremely tasty and very tender). I've still got some of the lamb left to have later in the week.

                        I have my scalloped potatoes in the oven and a piece of home-made deep dish steak pie ready to pop into the oven to heat. I have made the potatoes dish but I buy the pie from an English restaurant we frequent once a week and have brunch (as we did today) ... and they make it fresh, so I don't have to! :whistle:
