    Another vote for Canadian extra mature here; in fact, I like most cheeses, with the exception of the likes of brie etc (you know, the gooey ones that generally smell like rancid feet)

        Oh there's so many!
        Blue Stilton - I use this to make a sauce to go with steak, preferably venison steak.
        White Stilton - Makes a lovely soup with apples and celery in autumn.
        Cheddar - extra mature, white and slightly crumbly. Nice on toast with marmite or with a packet of crisps.
        Danish Blue - All for me as no one else will touch it!
        Greek Feta - Great with a salad (and again all for me!)
        Kefalotyri - A hard white Greek cheese made from sheeps milk, great for 'saganaki' fried in olive oil.

          I love blue chesse and over Christmas I found Shropshire blue, very nice. I also like Cornish Yarg and smoked applewood. There are a load more that my wife gets, but I don't know what they are called., she used to work in a cheese shop so has quite a good knowledge.

            A cow's milk cheese that is a combination of a French soft-ripened triple cream cheese and Italian Gorgonzola

            Delicious, though I like most cheese if made with cows milk
            Not into sheep /goats, milk stuff

              I love Yarg, you can get it wrapped in Wild Garlic leaves as well as Nettles now :)

              When the kids were little I told them that you bite into the Nettles and then go YAARRGG :biggrin:

              They still do it :)

                All cheeses are wonderful. Never met a cheese I didn't like. Some of my best friends are cheeses! I want to live with cheese, marry cheese and have cheese babies.:wub2::wub2::wub2::wub2::wub2:

                  Haven't a clue as have never come across Manchego.. But Kefalotyri is pretty tastless to me unless cooked when I love it.

                      And no-one has mentioned a proper crumbly Lancashire for Cheese on Toast. Mother Singletons Extra Strong is superb.
                      I was fortunate many many years ago to get on to the Catering Committee for our Students Union. Since we were doing a Cheese and Wine Part for 500 people or so we were treated like royalty in one of the big grocery stores and we got to taste every cheese they sold.
                      Sage Derby is good if rather rare these days and a Blue Wensleydale is mmmmmmm.
