    Ingredients
    150g ground almonds
    150g unsalted butter (president)
    140g molasses sugar
    3 free range eggs + 1 yolk
    Almond extract to taste
    mixed fruit jam to taste
    500g pack puff pastry

        Now they look nice derbyshire :) Not got molasses sugar but can the syrup type be added instead?..got a litre of that :)x

          Replace one cup of molasses with one of the following:
          Substitute 1 Cup of Molasses with:

          1 Cup Honey, dark corn syrup, or maple syrup

          3/4 Cup light or dark brown dissolved in 1/4 Cup hot water or liquid in recipe

          3/4 Cup granulated sugar dissolved in 1/4 Cup hot water or liquid in recipe+ 1 1/4 teaspoon cream of tartar ( for baking, cream of tartar add acidity present in molasses)

          1 Cup golden syrup ( much lighter in flavor)

          2 Cups Brown Rice Syrup ( reduce liquid in recipe by 1 Cup, if necessary)

          1 3/4 Cup Barley Malt Syrup ( reduce liquid in recipe by 3/4 Cup, if nessary)

            Thanks for the recipe! My friend who works at the Bakewell pudding shop in Bakewell won't tell me how they're made!

              Yes but use less as syrup is more runny than sugar. Also reduce oven heat and allow slow gentle cooking - best wishes!

                I've been told by a few people who've eaten my one that it tastes better than the Bakewell pudding shops ones. They are probably just humouring me then again lol

                      The Bakewell pud shop here posts them anywhere in the uk Jenny, not sure how squished they are when they arrive though ;)

                        As the hubby is on a paleo diet and doesn't eat gluten/flour, I make the same recipe without the pastry case. Still turns out lovely.
