How can I save these beetroots? The symptoms seem to be spreading.

        Have you been ignored;)

Many insect larvae produce mines by burrowing, and feeding between the upper and lower leaf surfaces. This lets in air, so mines are often pale or silvery.
Mines vary in shape from wiggly lines to blisters according to the miner
involved. Affected plants look bad, but the long-term damage is
        usually slight.

You have a caterpillar (maybe a moth) that lives in side the leaves if you take one off and put it up to the light you should be able to see it , apart from spraying which I dont like to with things I eat is take off the leaf and dispose off away from your beetroot. Or you can squish them once you are able to see where about they are in the leaf.

          I agree, its leaf miner.
Not easy to control without using a systemic insecticide.
Lost all my swede last year to these, never seen them on beetroot before.

I.figured it out last night when I inspected a leaf close enough for it to split 10 maggots out like a crazy spaghetti factory. Little suckers got slung and the rest got pressed a'tween finger and thumb once I discovered their weakness. They have booger all leaves really, now. Hopes up. I think my deets got it cos they are next to a dock plant.
