    Here is some of Geezer's chicken and mushroom soup. I didn't have any carrots, so added mushrooms when the soup was almost finished. I think that is what has given the oily look.
    I also didn't have any cornflour to thicken it :frown:

      The "oily look" is from the chicken fat (reading from your recipe above). When you make a chicken carcass stock you should leave it to go cold so the fat can solidify (chicken fat isn't a hard fat but it will still settle and thicken on the top of the stock). So, leave it in the fridge overnight, then you can skim off the fat in the morning before continuing to make your soup. Trying to skim it off when it is still warm is never going to be quite as effective.

      Did you have *any* type of flour? (Plain? Self Raising?)
      To thicken a soup/stew you can make Beurre Manie: equal amount of flour and butter creamed together with a fork and add it at the end of cooking time.
      1 ounce of flour with 1 ounce of butter would be enough to thicken 1/2 pint liquid. Just add a little at a time to your soup/stew to get the consistency you prefer.

        Yep, as mentioned in one of my earlier posts, I put the stock in the fridge and skimmed it in the morning, as per Mr Shineys tip some time ago. (possibly months back)
        To add to this, I then strained it to remove any remaining fat, which worked really well, and then I returned it to the fridge before going out. I then strained it again until it looked like pretty much all of it had gone.
        I added some plain flour, after looking up substitutes online, but I didn't add too much.
        Just to clarify, the tip was to put the stock in the fridge overnight.

          Two of my soups in my top 5 are, Chicken Noodle and French Onion , but I don't have any recipes.

            I love Mulligatawny :), Homemade Chicken, Chicken Noodle is cool, Celery, and Mushroom :)

                Mine has to be thai tom yum gai soup, guaranteed to clear colds and winter blues :snork:

                My recipe

                1500ml of chicken stock
                2 chicken breast or legs
                Mushrooms
                2 sticks of lemon grass bruised
                4 or 5 kaffir lime leaves torn
                1 inch of piece galangal or ginger chopped thinly
                2 or 3 (depends how hot you like it) thai finger chillis chopped with seeds
                2 tablespoons on fish sauce
                1 tablespoon palm sugar (or brown sugar)
                Lime juice

                    I like the ones you mentioned as well but Celery and Stilton :thumbsup:

                    so reading through all the post , I really like soup but not any with pulses or beans in yuck
