My girlfriend has decided that we have to bake as many recipes as possible before xmas. Here are the first of many:

Home made sticky toffee puddings:

 

You always do as your girlfriend tells you?

I can recommend Grapefruit Drizzle Cake. It's the same as a Lemon Drizzle Cake, but with grapefruit.
Also coffee and walnut. Or date and walnut
My absolute favourite at the moment though is Far Breton.

 

Any chance of that recipe for those sticky pudds @Mad Hatter ?

Sticky Toffee Puddings, 10 Portions:

Muffins:
225g Dates
200ml Boiling Water
85g Room temp Butter
200ml Light or Dark Muscovado Sugar
2 Eggs
2TBsp Light Syrup
300ml White Flour
1tsp Baking Powder
1tsp Bicarbonate of Soda
1tsp Vanilla Sugar
100ml Milk

Toffee Sauce:
200ml Light Muscovado Sugar
50g Butter
225ml cream
1TBsp light syrup

Muffins:
1) Pre heat oven to 175c.
2) Butter and sprinkle Muffin baking tray with flour
3) Remove Nuts and chop dates finely
4) Pour the boiling water over the dates in a bowl and leave for 30 minutes to soak
5) After 30 minutes drain the water and crush the dates
6) Mix the butter and sugar lightly in a bowl, taking care not to over mix
7) Add the eggs to the mix, one by one, adding the syrup after this.
8) In a separate bowl mix flour, baking powder, Bicarbonate and Vanilla Sugar
9) Add the milk to the bowl containing the flour mix (Bowl used in number 8)
10) Mix both bowls together taking care again not to over mix.
11) Add the dates during the mix
12) Spread out evenly in the muffin tray and cook for roughly 20 minutes (May vary slightly depending on your oven)

Toffee Sauce:

1) Mix the ingredients together and bring to the boil in a pan.
2) Let simmer until at your desired thickness before pouring over your Toffee muffins ready to be eaten now or re heated later.
