Old Speckled Hen Fudge!!

    420g Demerara Sugar

    115ml Milk

    120g Unsalted Butter

    397g tin Condensed Milk

    60-80ml Old Speckled Hen.

    Put everything except Old Speckled Hen in pan, heat slowly until sugar melted.

    Bring gently to the boil, and cook for 10- 15 minutes,stirring all the time.

    If using a sugar thermometer, boil until it reaches 118 degrees.

    Take the fudge off the boil and beat for a few minutes. Add the Old Speckled Hen
    a few drops at a time, beat for 8-10 minutes until nice and thick.

    Pour into a grease proof lined pan, cool for half an hour, and cut into squares.

        Does everyone know what Old Speckled Hen is ?

        Old Speckled Hen is an English ale from the Morland Brewery, now owned by Greene King Brewery. Old Speckled Hen was first brewed in 1979 in Abingdon, Oxfordshire, to commemorate the 50th anniversary of the MG car factory there. Since 2000,
        Old Speckled Hen took its name from an MG car which was used as a runaround for workers in the MG factory. Over years of service, the car became covered in flecks of paint, gaining it acclaim in the town and earned it the nickname "Owld Speckled 'Un", translated into Old Speckled Hen .

        Its a perfect drink for nicely grilled sausages .... come to think of it most beers are perfect with sausages :snork:

          I knew it @HarryS - back in the day when the local used to run "real ale" nights. There was another called "Dogs Knees" (?) or some such ( :whistle: ) - and that was really tasty!

            Have you tried the sister (brother?) beer - Old Golden Hen - to my taste a really nice light refreshing ale..

              This was my tipple of choice for a good while until recently when I fancied a change, so tried a range of different bottled beers. I had Estrella from Spain last night. Tonight is Cobra.

              But on the real ales though, if you like golden hen, you might like Waggle Dance. Its similar in many respects, but a lot more sort of smooth and mellow in flavour, and perhaps a bit sweeter. I believe they use honey in the recipe, and that's where the name comes from (waggle dance is what honey bees do to communicate).

                        Wonder if this will work with lambs rum instead?

                        I tried another recipe and the rum didn't really come through I thought.
