Salted Tomatoes

        Very simple Freddy, just scoop the middles out, quarter them and bury them in salt, it'll draw the liquid out of them, then they just sit in a brine.

        When you need them soak overnight in fresh water, change that in the morning and they'll be ok by lunctime.

        I soak my salted dried fish with them too :)

          How long can they be stored in the brine? Any special containers? (yes, I note you have yours in a bucket type thingy:))

            Years, not much lives in salt.

            There was a 12th century Knight who's coffin got moved and the lid came off, he was perfectly preserved in some sort of brine. One of the folk tasted it and said it tasted like Catsup :yikes:
