Local pork roasted ( with golden crackling), roast King Edward pots, parsnips and onions, sage and onion stuffing, braised celery ( done in oven at the same time as pork), spinach and new carrots. Then, rhubarb crumble and cream,

Saturday-picked up 4 nice hunks of cod from the farmers market. Saturday night made a huge fresh green salad, romaine, tomato, Brussel sprouts, cucumber, and scallions. Simmered 2 of the fish just in butter and lemon and old bay served it with toasted red quinoa.

Sunday morning—took the other 2 fish hunks, simmer cooked in olive oil and salt. Made couscous with minced garlic. Cut up some kale and scallions. Put it all together with some mayonnaise for a cold fish salad later today. And to take with for lunch to work this week.

For dinner tonight we are having a nice roasted turkey breast with green beans, and simple diced red potatoes in butter.

Tonight = roast half shoulder of local lamb with roast tatties and a hoard of braised in the oven veggies and cauliflower, and then a little Apple and Blackberry crumble and cream,

Following on from Sunday's roast leg of lamb, today I am making a traditional Shepherds Pie with the leftovers.
I've got the bones bubbling away to make stock and the aroma filling the house is absolutely hunger inducing! [IMG]

Busy day out and about today, so cooking didn't even feature on the priority list.
Instead a cold plate of smoked ham, coleslaw, crusty rolls, cherry tomatoes, pickles, cheese for those who wanted it, and followed off with a Gypsy Tart - not at all healthy, but welcome and satiating all the same :heehee:
