Garlic - what to do with it to preserve/store?

    We've got quite a reasonable haul of garlic (not bad for a first attempt), but now don't know what to do with it to store or preserve it - any suggestions?

    I'd say treat them the same as onions. Dry them off somewhere airy. Once the foliage has died off, cut it off along with the roots. Then store in a cool dry place.

      I will just add to what Freddy says, dry them off for at least a couple of weeks outdoors. I put mine in a blow-away to keep the rain off. They need to be kept dark in storage, in a paper bag for example, then they will last till next year.

          Same as chillies then @*Potash* - looks to risky to me. What about making a garlic paste/purée and either putting it in jars or even freezing it in cubes or portions? I have a vacuum sealer...

          Failing that, what about making a sauce base from it (and maybe include the small glut of tomatoes we have coming?)

          I just dry it off and remove a few of the outer skins that have gone dry and flaky.

          It then lasts in the garage until at least May the following year.

            I have made Garlic oil for many years, but I never leave the cloves in, I put the cloves in
            a wide neck bottle, infuse for a week, and then strain off cloves, I store in dark
            glass bottles, all good olive oils should not be in clear bottles. Then I store the bottles
            in the darkest and coolest part of the garage. :thumbsup:
