    @CanadianLori (& all you lovely lot) please can you sort out a problem I'm having with making ice cream? What exactly is half-and-half? :scratch:

    To the best of my knowledge half and half is, Half whole milk and Half Cream (cream thick that you would whip up for a trifle topping or on Strawberries
    so half a pint of whole milk and half a pint of thick cream (or quantity you want to use)

            Yes but which two? The ingredients says 600ml of half & half, no explanation of what it is :scratch:, I thought I was missing something but when I asked four people at work they had no idea what it was either!

                No not Jamie Oliver, it's in my new kitchen aid recipe book!

                I've made pink elderflower sorbet before that was really yummy :snorky: full of sugar & had me bouncing off the walls :hapydancsmil:

                  I wonder if buttermilk would be our equivalent to butterfat? I think tomorrow I must have a play around & see what works best :dbgrtmb:.

                    What you call whole milk is 3%butterfat here. what we call whipping cream is 40% b.f., so the half and half is ? Hope that gives a marker .. ?

                      What we call "whipping cream" is 40%butterfat, so maybe the original was 20%but manufacturers started shaving that back?
