I'm pretty sure it could have been a total disaster!

I spent all day out on Wednesday and didn't leave my little greenhouse open at all, it was very hot but when I checked on the toms, cucumbers, peppers and aubergines they all looked fab. It looked like they had quite enjoyed the day closed in.

I got up Thursday morning and opened up the greenhouse to let some air in etc. I walked away and left them while I watered everything that needed it and then went back.

 floppy plants everywhere, even my biggest tomato plant had begun to flop and wilt at the top

I closed everything back up and left them all day and :D they are all back to normal this morning...Had a quick peek in this morning and all is well PHEW!

SO...Should I just leave them closed in if they are enjoying it, or should I only open at certain times of day?

My guess would be that with the greenhouse closed up the atmosphere would be very humid, and the plants wouldn't use much water. Once the door was open the humidity would drop, and the plants would start drawing up water. If they couldn't get enough then they would droop. If they are adapted to high humidity they are likely to have a lot of leaf, and not enough roots to cope in drying conditions.
