think im gonna need some help .

the tree has produced some nice full flavour sweet apples. some green on the north side and full reds on the south side. and inbetweens in the middle.

i trimmed the tree back a few years ago and it took years to produce apples again . so i now only trim off the braches that get in the way . basically i leave it allone now it does wot it wonts apart from the odd branch being trimmed off .
it is an old tree maybe dating back to the 30's (pos planted when my house was first built).

now were i need the help. it produces a good stock of fine apples. i get to eat qute allot off apples, but there is only so many apple's one can eat.
so im thinking , the glutt off apples could make a dam fine cyder, but i dont know how to make cyder
    please help
im estimating a good tonne pluss of apple's from the tree this year

You press them to get the juice then add brewers yeast and sugar to get it fermenting then basicly rack it off once it stops sediment using a syphon to remove the cider leaving the sediment. A homebrew shop will sell the yeast and suitable containers to ferment in and should be able to give you more advice.

Pressing the apples is were youll have the problem, bought new the preses are quite expensive and Iv never seen one for sale although ebay might have the odd second hand one.

Never saw so many flowers on an apple tree in my life before :)
I once had a brilliant recipe for cider .... it didn't involve pressing the apples for juice, and incorporated lemon juice and sugar and another most unusual ingredient (the secret ingredient) which for the life of me I can't remember. However, the product was just the best cider you have ever tasted in the world :)
Now if I can only just get my brain into gear I will let you know what it was. Of course, you would still need the whole recipe .............. :)

I also once had a cider recipe similar to Sam's Didn't need pressing, the fermentation process broke down the apples. Mine included a tiny drop of water and, instead of brewer's yeast, raisins of the old fashioned unwashed variety which have a natural yeast on the skin and boosted the alcohol content Don't suppose you can get those now though. Probably banned under health regulations or Part P or something.
