    Have lost my recipe of carrot cake had it for years it was so good.

    Has anyone got a good recipe for carrot cake.

    I have never eaten carrot cake :eek:

    Those links are broke Mr Webmaster sir, I think we sank the website looking for carrot cake. I was going to print off the low fat one ;)

    Hang on folk, I'll come to your rescue tomorrow late afternoon as I have dentist, art galleries and luncheons to tend to in the morning ... oh, such is the life of a LoL! Sigh!

    Carrot cake is absolutely delicious if you have the right recipe, believe me, having lived in the USofA for a total of 20 years, I think I have a clue on this one!

    Actually, carrot jelly is wonderful as well ...

    It's ok BM, you don't need teeth to eat bananas!! :D :D
    I use a quick and easy recipe at work, if I get time I'll write it down and post later.....but it will be in building site quantities!!!! :D :D

    I'm running ahead of schedule so here's the Texan recipe ...

    Carrot Cake

    3 cups Flour
    1 tsp Sale
    2 tsps Baking Powder
    2 tsps Baking Soda
    2 tsps Cinnamon
    2 cups Sugar
    1 1/2 cups + 2 tbsp Sunflower Oil
    4 Eggs
    2 cups grated raw Carrots
    1/2 cup chopped Walnuts or Pecans
    1 tsp vanilla

    Preheat oven to 350oF, 180oC, Gas 4.

    Sift dry ingredients together, add oil and blend well. Add eggs, one at a time and beat well until the mixture is thick. Stir in carrots. Add nuts and vanilla and mix thoroughly.

    Pour into an ungreased 10 inch tube pan or cake tin of your choice.

    Bake until cake rises (about 15 minutes), lower temperature to 325oF, 160oC, 3 Gas, and continue baking for one hour.

    I adore Carrot Cake.....it is sooooo sweet and moist. For an extra special treat, you MUST ice it with cream cheese/ icing sugar / orange juice frosting..... heaven...... [​IMG] [​IMG] [​IMG] [​IMG] and soooooo easy to make.

    Ok, I know it's a month later than I said I'd post it, but better late than never [​IMG] :D

    Makes one foot square cake....

    12oz grated carrot
    1lb S-R flour
    1 500g pack sultanas(toss 'em in a bit of the flour first so they don't sink)
    half pint veggie oil
    5-6 eggs
    good sprinkling mixed spice
    good sprinkling baking powder
    half packet dark brown sugar

    Mix all together (gives good muscle tone in mixing arm!)
    Bake on low heat (140?) for couple of hours - until knife comes out clean. (bake slowly otherwise outsides burn and middle is goo - yuk!)

    I currently make 6 of these a week - it has the construction industries seal of approval :D :D

    Thankyou Windy have already made carrot cakes and made again yesterday to take along to our dance class tonight as it my birthday to day and one of the other girls that goes is her birthday also.

    A nice way to celebrate our birthday at our dance class .

    Your recipe looks really good.

    Carrot cake went down a treat at our cuppy in the evening when we stopped for a break at our dance class.

    Been asked for recipe.
