Chaps..I have just the one job at xmas, stuffing the pre-boned Turkey,so to speak!(costs a couple of quid extra at the butchers to get it boned ;) )
    Sausage meat
    Onions
    Bread crumbs
    Eggs.
Quantities to suit your own taste.
Quite simply mixed the lot together and stuff into the split breasts ,leg cavities and middle of the bird. (Don't over do it though, and any excess can be made into balls for seperate cooking or frozen for another time.)
Sew the thing back together so it resembles a bird again.lay in in a tray on the bones to keep in out of the fat and bang it in the oven.
When cooked, let it stand for an hour wrapped in tin foil. Carve and let the women folk admire your beautiful skills and taste the wonderous fare!
:D Mrs Pal has just confirmed that I do a very nice job of it too!...BUT,...that is all I do bloody do!... :D

That sounds yummy, yummy, Pal! However, I'll do something different with my duck and keep you recipe for a turkey day.

Rosa, it's something to do with stuffing the stuffing up the backside! :D Cleanliness is what I think "they in know" harp on about. If you thoroughly wash your bird in question, there should be no problem ..... and, as you rightly say, we've done this for years and are still here! :D :D

PS Do you remember before they had "sell by" dates? Another one to ponder on!

Well that's my job done for Xmas. The 18lb Turkey is well and truely stuffed and with the left over stuffing I made balls as a side order. [IMG]
I'm a bit cross that the butcher made cuts in the skin though!
