I have a very old cherry tree, about 18" diameter and about 2 storeys high, it always fruits profusely, although the fruit is a bit small it tastes good. As the tree is so tall it is impossible to get to 95% of the fruit. Is it possible to cut (prune) it down to a manageable size or do I need to take it down completely.

At the height you mention it is a climber or cheery picker job (excuse the punn!). A tree surgeon will be able to sensetivly prune it, Be carefull to actually get someone whon knows what they are doing.

My 'mantra' for tree work is that were possible pruning should be comparitvly invisible ie retain the overall shape and balance of the origional tree.

It must not be pruned in the dormant season. Cherries would then get silver leaf disease. You can prune them after the leaf buds have burst.
