    They are better harvested after frost the starch in the root turns to sugar and makes for a tastier parsnip.

    Luckily,though i didn`t think so at the time, we had frost maybe just over a week ago.So, hopefully, i`ll have sweet roasted pasrsnips with my dinner tomorrow.
    I must admit walnut, even though i`ve heard it said a hundred times or more, i never actually knew how or why the frost affected their taste. Now i know the science behind the myth.

    I've heard that putting them in the freezer has the same effect. One of the reasons why frozen tastes slightly different from fresh.
