Drying herbs

    I have had my forst attempt at drying herbs - sage in particular - I use it for making sausages quite a lit but as It don't need at at present thought I would dry some. I put it in the oven low as poss. The instructions said break it up and it was the right texture however it appears to have lost MOST of its smell.

    When drying herbs do they tend to lose flavour and smell immediately? Will then be ok? Is it better to freeze in ice cubes. Can anyone advisse. Normally I am on Allotment website this is new to me.

    Ice cubes are good. I dry my herbs by just hanging them somewhere warm but out of direct sunlight. Its also best to pick the herbs before the midday sun drives off the essential oils.

    :thumb: I agree with Ziggy I freeze some of mine chopped in ice cubes some I open freeze whole on a tray then bag them with sage leaves.. I dry mine like Ziggy does but I put them in a paper bag too..
    I do the same with mint as well.. Lots of ice cubes of mint sauce.. :wink:

    Thyme I freeze on the stem in polythene bags A bunch to a bag.. Then you can take out whole sprigs for cooking & better flavour..:wink:

    I don't use the oven method as I feel you lose the flavour as it is too quick, but that is just me.. :wink:
