I am getting a small gardening parcel from Italy. Am I right in assuming that I don't need to include the surname provided of course that the address and postcode are accurate?

If there is only one household at that address within that post code then it won't matter whether there is a name or not.
If it's a shared property the mail will probably be delivered to a communal box and the residents can sort it out between themselves.

No surname needed, just address & post code.
