what to do with tomatoes?

    I used the end of last years toms to make some Indian Tomato Chutney - seems to work fine with a mixture of green & ripe too which is handy.

    Heres a link to the recipe I used - you might need a trip to the local Indian supermarket for some of the bits though !

    Put the tomatoes in a roasting dish with a couple of slugs of olive oil, some cloves of garlic and sprigs of thyme. Salt and pepper to taste and then roast for half an hour. It should all reduce down and can then be blended to a smooth sauce. Store it in freezer bags and use it as a base sauce for soups, curries, pasta sauces etc. :-)

        I also wash mine, cut off the stems and put on a cookie sheet and place them in the freezer, and once they are frozen, i place them in freezer bags and use them during the winter for pasta sauces, soups, stews........better then the canned stuff!!
