I have successfuly grown a number of different chilies this year and thought of pickling a few. After looking at a number of web sites discussing and recommending recipes for this subject "pickling or canning salt" and "non iodized salt" keeps coming up. This product does not seem very easy to get hold of in the UK but is quite common in the USA. I believe using it prevents discolouration. Any feedback/ recipes would be welcome. Many Thanks.

Do your homework before pickling chillis, they can be very toxic!

I think Marley has some advice on this topic!

I just heat pickling vinegar with some sugar and pour over chillies packed into a sterilised jar. Simples.
