Tree ID Please

    Hello.
    I "think" this is elderberry tree from pictures I have seen on the Internet, but I could be mistaken. Can anyone confirm please?

        Lol, thanks. Looking at cordial recipes etc, although I probably would have scoffed a few raw. :-)

        elderberry and clove syrup is wonderful :)! V easy to make (though you do get purple fingers for a while!) A handful of elderberries thrown in with apple make a great tart/crumble, and if you find that your cooked blackberries look a little grey, or brown, then throw a few elderberries in, and the sharp tang and colour will make your blackberries even better!
        (you may be able to tell - I'm quite partial to the Elder tree!)

        Elderberry syrup with cloves, my mother in law made loads of it. Add hot water for a lovely drink - good for colds!

        Not after all the hangovers i've had from it:biggrin:

        Used to make Elderberry Champagne, the froth was pink.

        I made something called pontack with them once, never really found a use for it (sharp, tangy, add to stews). Made elderberry and apple jelly, wasn't keen. They're quite low in pectin and I didn't think much of the flavour. It's a shame as they can be so plentiful. I might try the syrup!

        Mostly I would note the location and return in may/June. Elderflower champagne, elderflower cordial, elderflower Turkish delight, elderflower jelly, elderflower anything I can incorporate it in. One of my favourite flavours.

        Reetgood, if you make a jam/jelly, you need to choose a complimentary flavour to go with them. Yes, they are low in pectin, so you need apple, but I think they go v well with blackberry, and they are v high in vitamin C.

        The Elderberry and clove syrup is a great weapon against winter colds - hit 'em hard with a vitamin C spike, and soothe the sore throat with the clove anaesthetic (I have to warn friends who use it to be careful with their voice afterwards, as your throat feels so much better after a hot elderberry drink!)

        Elderberry champagne? I'm all ears! Do you still have the recipe, Zigs?
