I didn't get mine all the way dissolved so had some grainy bits on top. Next time I will make a syrup. I think I will also try substituting apple sauce for the marg for a low fat version. Did you eat it all yet? Finished mine off last night!

It's funny because i'd only bought one on Thursday....so i did a test on Mr L...cut a slice from each and asked which he thought was the best...he didn't know which was which but thought mine was the best

Glad you all liked it!:hapydancsmil: I cut down on the sugar topping too ,but have never dissolving the sugar and lemon as I wondered if it would lose the some of it's 'crispyness'? A trick I have is to spike the cake with a skewer before adding the topping, so that some of the juice penetrates deeper

I just made mine!! will take a pic when I find the camera.

mine took 50mins @160c!! maybe cos I used a silicone loaf "tin" as opposed to metal?

                  it came out looking lovely!

but after drizzling the sugar and juice on it, the silicone decided to give up on its "non stick" properties....

Yes Jan it probably would. You could just lightly sprinkle the top with sugar and get that same texture. It would come out more even that way too.

Going to give this a try today with my son. My wife is doing a McMillan coffe morning on Friday so if all goes well I will fo another on Thursday for it. Looks scrummy, might even put a bit of icing on it.

Even my failed "caved-in" cakes were greatly appreciated in the 2 places of work they went to this weekend. I think it could be re-named "The incredible disappearing Lemon Drizzle Cake"!
