Right now, mine are in the wok. First they were briefly fried in butter, then I turned the heat down, add milk, and now they are poaching away.

This is how I always cook haddock fillets, and indeed most white fish.

    Sometimes I make goujons.

There must be more ways to do it?

I always cook fish either dotted with butter and put in the microwave, or I butter cooking foil, wrap the fish up and bake it in the oven for about 25 minutes.
Serve with new potatoes and peas!!

Never caught a Haddock, they don't come down this far south, but I have had smoked Haddock pasties from the Bridfish Smokery, they are fantastic.

Only place i've ever found fish pasties for sale.

Only poach Finnon Haddock with milk
Fresh haddock is as Val says microwave a couple of minutes or tin foil bake for 20/25
or a gentle fry in shallow oil for a couple of minutes

Off course Arbroath Smokies, are already cooked by smoking so eat either cold as they come, or bang ding for two minutes

Roast a dish of red peppers, garlic, sweet potato, squash, with olive oil, for about 45 mins. When done, place the fish on top and pop back in oven for a few mins with a bit of salt and pepper, and some veg juices spooned over. Eat with some crusty bread to mop up juices. Yum

Deep fry in batter and serve with chips - leave something else for 'healthy eating', but the smoked ones are best poached in milk and used in fishy pies with a mashed spud topping.

Flour ,egg ,breadcrumbs fry until crisp both sides, serve with baby potatoes french beans and hollandaise, works for most white fish as a change from poach in milk which can be bland.
