Its getting to that time of the month where one has an eye on pay day (Friday), so I am trying to dream up stuff from the freezer & garden to see us through. I have defrosted some skirt steak and was thinking of doing the following:

Skirt steak, diced, rolled in seasoned flour (garlic salt & cracked black pepper)
    Tomatoes (thank you garden :))
    Onions
Caribbean Peppers (thank you garden :))
    Some beef stock
    A touch of Balsamic vinegar
    Herbs
    Maybe Paprika?

Lightly browning the seasoned meat before adding everything else, and then leaving to simmer - or, I might even shove it all in the slow cooker? Hmmmmm.....

Now, I am wondering if the tomatoes will be OK simply halved and cooked down, or will they need their skins removing?

What do you reckon ladies and gents?

Sounds like I'm coming to your house for dinner:)

I'd go with seasoning and coating the diced steak and then fry it briefly on a high heat to seal it all.

I'd quarter the toms, just because their skins will come off in cooking, which isn't a bad thing, but great lumps of skin don't make for a pleasant texture.

Then I'd chuck it all in the slow cooker.

Thanks mate - I am just about to head into 'domestic god' mode; Mrs C is at work today for the last day before she is off for a few weeks holiday, so I am planning to gut the house, clean the windows, and have dinner bubbling away in the slow cooker.....

Should make for a nice evening with a glass or three of wine.

ps ( I'd probably rem0ve the toms skins as these littleuns have very thick ones. I know it's good roughage and all that...)

Life's too short to remove a tomato skin.

Sounds like a fab dinner, FC. I love back-of-the-fridge suppers.

Awww, bless! I've never had two lovely ladies vying for my attention before. Trust me, once you saw me or had to live with my wee foibles you would soon change your minds.

I've done most of the stuff on my OCD list (I am terrible when I start cleaning, to the point where anything that moves gets moved and scrubbed and anything that doesn't move gets scrubbed twice :heehee:), and will shortly be going to play with the traffic to pick Mrs C up from work.

Dinner is bubbling away in the slow cooker, and smells lovely - I do love my slow cooker. Better still, the tomato skins have conveniently removed themselves, so I can just pick them out before serving.

For tomorrow's back of the cupboard job, I am thinking along the lines of corned beef hash - not had that in years!

Crikey! Three lovely ladies, and a bloke too!:heehee:

al n - much as I am in awe of your gardening skills, and think you are a helluva nice bloke, I am not on 'that' bus if you know what I mean. I have a colleague who may be interested though...... :dunno:

Well, its just gone down a storm - no paprika in the cupboard, so had to make do without. I also added a few carrots lurking in the fridge and let the lot simmer away all day; I served with pasta (done properly and all mixed through of course), and topped with grated mature cheddar. Clean plates all round :)

Just hope the corned beef hash works out just as well.
