You harvest the strawberries when they go a dark red colour ( tell that to my 7 y old lol), do you mean runners?

You eat fresh with veggies if possible, drying out is a little beyond me-I am new to edible gardening.

Do you want to dry the Runners so you have seed for next year?

If so leave them on the plant until they are fully ripe then pick and let them dry on a window ledge.

When you let a plant produce "mature" pods like this it will stop fruiting, so I only do it for a couple of plants, and towards the end of the season.
