Know your onions

    The moment grabbed me so have pickled some shallots. Larger jar is with pickling vinegar, peppercorns, mustard seeds, garlic and chilli. Smaller jars are with juniper, peppercorns and bay, half pickling, half cider vinegar and a dash of demerara :)

    That's shallot! [groan]

      Thinking about it, I have some spare Weck/Kilner jars. Do you need to buy special onions or will any smallish ones do?

      Any small onions or shallots will be fine as long as they're firm. Opinions differ on whether they should be brined or not overnight. My last lot weren't and they were fine and crunchy even after 12 month; these ones ones have been so I'll see how they turn out:)

      I always add blade mace to my pickling vinegar.

      I can remember my grandfather sitting in the garden peeling pounds of shallots for pickling. He used to fill the old fashioned sweet jars with them in the days when they were still glass. :)
