Turkey - help!

    Yesterday we had turkey (I know, its not Christmas, but they were going cheap); anyway, we popped it into the oven just as we were starting to assemble Little C's new bed, and I stupidly forgot to ask Mrs C to cover the turkey with foil................ then, just to make matters worse, we had a bit of a disaster when the new bed wouldn't fit in the space where the old one had, so we had to move the whole room around which led to us being later than we had anticipated getting back to the kitchen.

    The upshot is that the turkey was overdone, and although edible, it was a bit dry. I have the other half of it in the fridge for today's dinner and was wondering what I could do with it to soften/.moisten it up a bit for today. I spotted a tin of chicken soup in the cupboard, which made me wonder if I could use that to form a sauce? Or maybe warm it through in a egetable stock?

    Spice is out of the question, as Little C won't touch anything that is even remotely spicy. Any ideas?

    Why not make a creamy mushroom sauce to go with the bird?

    Put a large knob of butter into a pan, when sizzling (but not burning) add sliced or chopped mushrooms (preferably fresh ones), add red wine to pan, a bit of salt and optionally some garlic or even chopped spring onions.
    (Don't add too much wine or the sauce will be too runny even after adding the cream).

    Don't overcook mushrooms (few minutes on high heat is ample) then add a bit more butter then double thick cream.
    Wait a few more minutes for cream to reduce slightly and combine with the butter and wine.
    Add salt and black pepper to taste.

    Cut the turkey into slices and pour sauce over.
    Serve with pasta or spuds and a side salad and some crispy ciabatta bread (to scoop up the extra sauce).
    Very yummy.

    Thanks for the idea @DIY-Dave :). One slight problem though, I can't stand mushrooms (I am the only fun-guy in this house :snork: )

        I always cook by birds in water, put bird in roasting tray with about inch of water, but i do cook in a rayburn slowly, most birds are in the oven for about five hours

          You could slice it and place on a baking tray and give it a good misting with water,cover and warm through...works for me:thumbsup:...not that I over cook things:whistle:
