'dwarf' fruit trees?

Im thinking about getting some dwarf fruit trees in the raised beds on the allotment, but are these really dwarf? or when you plant them in beds (not pots) do they just grow to their normal size?

If they are dwarf what general size do they grow to?

I think its mainly down to rootstocks.
You can get very dwarf rootstocks for apples, not sure about other fruit, pears etc. but you probably can.
Kind of thing you need to research first and then buy from a good nursery, preferably one where they do their own grafting and growing on, up till sale.
