My beet root seedlings, which were thriving in my (un heated) greenhouse since being propagated mid February have now started wilting. I've been keeping them watered but found them very dry yesterday, could this have done them in?

It's probably a lack of light coupled with relatively high temperatures during the day. I'd sow again late April/early May, direct in the ground.
