I have grown some different types of Allium blulbs this year for the first time.
    Some have now finished flowering.
When is the best time to take the seeds to save.

I reckon you need to let them dry mostly on the plant. Covering with a fine net bag - that will catch the seed if the pods burst, but let air in for drying - might work.

I have picked a bunch of flowers, and hung them upside down to dry [indoors] with the flowers enclosed in a paper bag - which I shake occasionally to dislodge the seed.

But I'm no expert I'm afraid.

I'd agree with that - wait until they're ripe and then collect

Wait till they are black. Then sow them in a pot and leave outside in November. They need the cold weather to break dormancy, and the seedlings will emerge around March. Its best to leave them for 18 months in the same pot - so use a reasonably deep one.

They will take a while to grow. My Allium christophii bulbs were the size of a seed pearl after their first summer, and are now the size of a large pearl in the second year.
