    am I right in thinking, one carrot seed = one carrot (assuming it grows successfully!)
    or one bunch of carrots?!

    One seed = one carrot. The 'carrot' is actually just the central tap root of the plant. One seed wont make two plants, there'll only be one central tap root (unless it forks, but then its one forked carrot rather than several individual ones).
