Apple Butter..... Yum..!!

:yho: My friend gave me this recipe a few years ago now & it is yummy..!!!! :yho:

Spicey Apple Butter.. Ingredients:

6 lb (2.8 kg) crab apples (or windfalls) I use windfalls myself
2 pints (1.1 litre) water
2 pints (1.1 litre) dry cider (Alcohol will boil away...)
Sugar
1 teaspoon ground cinnamon
1 teaspoon ground cloves
3/4 teaspoon ground allspice
Rind of Â½ lemon or lime, grated finely
Method:

Wash the apples, remove any bruised bits and cut into pieces.
Place in a stainless steel or enamelled pan with the water and cider.
Bring to the boil then simmer until the apples are very soft.
Push the fruit and cooking liquid through a fine sieve and weigh the pulp.
Allow Â¾ lb (340 g)of sugar to each l lb (450 g) of pulp.
Return the pulp to the pan and simmer until it has reduced by about one-third or until thick.
Add the sugar, cinnamon, cloves, allspice and lemon or lime rind.
Boil, stirring frequently, until no liquid remains.
Spoon into clean, dry, warm, sterilized jars.
Cover and seal with an airtight lid.
Label with date and contents when fully cooled.
Makes about 6 lb (2.8 kg) of Apple Butter.

Store in a cool dark place for a min of 3 weeks....!! Yummy or what...!! :yho:

Oh! It does sound yummy Marley Farley.
Can I be really dense and ask what is the best way to use it ?
Do you serve as an apple sauce, spread it on sponges or what ?

Hi Alice, yes I use it as apple sauce, make little tart-lets,spread in sponges, accompaniment to cheeses & cold meats... You can use it for anything you like really....!! :wink::D

Marley,I watched some ladies making Damson Butter on the TV on Monday...same process I suppose.
Family always made preserves but fruit butter was a new one on me.
Wouldn't mind trying some...perhaps my Cherries could be used.

Hi Dave, Well I store all my preserves & pickles in a cool dark cupboard in my utility room... It seems to keep very well as far as I can tell, but I don't think I ever have any left past 6 months with my lot...!!!! :lollol:They scoff the lot.!:lollol:

[align=left] Cherry Butter Recipe - A simple Guide

[align=left]You will need:[/align]
[align=left]4 lb Cherries
1 Lemon (Grated rind and juice of)
2 lb sugar

How to make Cherry Butter:

[align=left]Wash and stone the cherries. Crack a reasonable number of the stones and extract the kernel, leave to one side. Immerse cherries into a pan of boiling water for approximately 1 minute to blanch them, remove from water and skin.[/align]
[align=left]Add the juice and rind of the lemon to the cherries, and put into a bowl with the sugar, in layers. Cover and leave overnight. [/align]
[align=left]Place fruit into a preserving pan the following day, and bring to the boil. Simmer for 15 to 20 minutes, then boil rapidly until very thick. Stir constantly and remember to scrape the bottom of the pan occasionally. Add the extracted kernals, pot into small jars or bowls and tie down ( [/align]
[align=left]Please note that this cherry butter recipe, unlike fruit cheese recipes, requires no sieving.[/align]
[align=left]Serve cherry butter with biscuits or on homemade crusty bread. [/align]
