Apple tree help....

    Hello all,
    I have a question for a fruit tree expert. I have purchased a cheap small bareroot fruit tree which I want to train in an espalier fashion. So far I have a main stem approx. 30cm high with two health side shoots which hard semi hard wood. I have taken the top out of the tree as per the advice of a family member. Should I now start training the 2 side shoots?
    Should I also take all growth/leaves off the stem?
    Any help would be great
